About the Producers

César Muñoz comes from a family deeply tied to the countryside, where rural work meant sacrifice, perseverance, and working together. With the support of his parents, he was able to study through university, always carrying the curiosity and drive of someone who wanted more than just getting by. After school, he left for the United States to learn English and experience something new, but when the pandemic disrupted everything, he adapted the way he had been taught to: by working hard, staying steady, and turning the uncertainty into perspective.

When César returned to San Agustín, he came back with more maturity, more ideas, and a clear desire to bring what he had learned back to his family and community. Today, his life moves between the farm and the classroom. On the farm, he experiments with processing, fermentation, and flavor, pushing each lot toward something more expressive. In the classroom, he teaches at a rural school about an hour from San Agustín, showing young people that education and the countryside do not have to be separate paths.

With the help of his parents and younger siblings, César continues the family tradition of shared work while bringing in new tools, new ideas, and a deep passion for specialty coffee. His coffee reflects that mix of rural discipline, curiosity, and love for his region. He represents a new generation of rural producers: educated, proud of where they come from, and determined to prove that the countryside can be a place for innovation, education, and a stronger future.

About the Processing

Cherries are picked on a three week cycle, allowing for peak maturation. Once picked, the cherries are fermented in sealed barrels for 24 hours before repulsing. The depulped seeds are then returned to the sealed barrels for an additional 48 hours, before being moved to dry in solar drier for 18 - 22 days.

The FOB price for this lot was $5.92. During the harvest season from October through February, the New York C price for coffee was an average of $?.??; the $5.92 FOB price for this coffee includes a significant premium for the farmer above the C market price, which reflects the excellent quality of this coffee. After being imported to a warehouse in the consuming country, the United States, the coffee cost was $7.50/lb. The cost of the shipping from the warehouse to our roastery made our final green price $7.75.
