Processing
Local language: Gedinga
Ripe cherries are harvested and purchased. After a presort, the coffee is pulped with the “Agard” local pulping machine, then density sorted by floating before fermenting in large concrete tanks for 48-72 hours, weather depending.
The coffee is washed in channels before being moved to raised beds to dry and be further hand sorted for defects. After checking moisture and finishing more defect sorting, coffee is stored in parchment onsite before being transported to Addis Ababa.
